Organizing is one of my strong suits when it comes to cupboards, furniture, and other peoples lives. Just ask my husband, he will tell you I am great at organizing his life. Okay, maybe not, but that’s another story.

At the moment I am going through every niche and corner of our house with a fine tooth comb. The clutter and stuff that is squirreled away in cupboards and corners I could swear I packed off to the local youth ranch 6 months ago. But here it is, in all its glory, multiplying faster than a rabbit and threatens my path to simplicity and sanity.

Potato and Egg Baskets: Gluten Free - Pure and Simple   You have heard that old saying when ringing in a New Year, “out with the old, and in with the new,” right?  I find I am perfectly willing to part with old shoes I never wear, and dishes collected over the years that sit around and gather dust. That is the easy part. The greater difficulty will be to stick to the decision I have made not to accumulate more stuff. Shocking I know, especially in our society of commercialism with messages everywhere we look  appealing to us to buy, buy, buy.

Potato and Egg Baskets: Gluten Free - Pure and Simple   This year, I am saying no. I don’t need another widget, whatchamacallit, or whoosit. I am taking back my home, living simpler, and giving more to those things that money can’t buy. Small, organizable, actionable steps, to reclaiming my sanity in a crazy mixed up world. Who’s with me?

Potato and Egg Baskets: Gluten Free - Pure and Simple   Potato and Eggs Baskets are perfect when you have a little extra time to spend in the kitchen. Start with a potato crust, add deliciously seasoned eggs with chicken sausage, sun dried tomatoes and parmesan cheese. Warm from the oven, sprinkle a bit of goat cheese on top and voila, a hearty gluten free breakfast fit for a king.

Extras can be put in the fridge, and warmed up in the microwave for a quick easy breakfast later in the week. Work a little today, and save a bit of time tomorrow, now what could be better than that?

Breakfast on the Go

I have always been delighted at the prospect of a new day, a fresh try, one more start, with perhaps a bit of magic waiting somewhere behind the morning. – J. B. Priestly

 My Grandson, Edison spent the weekend with us as Tim and I usually have the pleasure of his company one weekend a month. Edison spending time at Pure Grace Farm gives mom and dad opportunity for a little one on one time, and Grandma and Grandpa great face time with a special little man. At 3 1/2, his moods can be somewhat mercurial, so we never  know quite what to expect during our time spent together and mostly just go with the flow. Gluten Free Breakfast Cookie: Pure and Simple   This weekend was just about perfect in every way. We had no accidents or homesickness, and enjoyed a weekend filled with giggles, laughter, and breakfast cookies.

Healthy Breakfasts for Every Day Life

I need the gentle reminder of today’s quote by Alan Cohen.

As I look around me, I see so many things left undone, partly because of the convenient excuses of timing and conditions. While, I don’t want to make the New Year just about losing weight and exercising, I realize that as I am aging, my health is suffering from these two things and I am in a place where I can not ignore the obvious any longer.  If I am honest with myself, I can admit that status quo is much easier to maintain and change is hard. Really, really hard!  I want to wait until the conditions are perfect, believing that timing and some magical moment will make all the difference, make it easier some how.

Gluten Free Pancakes with Orange Maple Butter- Pure and Simple  

This conversation has been going on in my head for so long, it has become ingrained, settled, like a deep rooted weed that refuses to die.  In the past several months I have known that a change in my lifestyle was necessary.  Growing healthy foods at the farm and making foods from scratch, is a wonderful start and makes my path a little easier. It is time to take that next step, live and eat a little more simply, cut down on the processed foods, and concentrate on eating with intention. I have no illusions that the decision itself will make the changes any easier, and although the circumstances aren’t ideal, “beginning makes the conditions perfect”.

What better way to start a few changes, than with breakfast, the most important meal of the day and usually the most hurried. In the next few weeks, my plan is to post recipes that can meet any circumstance. Breakfasts that are healthy, quick and on the go, or breakfasts a bit more leisurely.  A few recipes may be a bit more involved, but worth the extra effort for special occasions. 

Gluten Free Pancakes with Orange Maple Butter- Pure and Simple  

I have never eaten gluten free pancakes before. In my mind they consisted of hard, gluey little hockey pucks that one would somewhat tolerate only for the  maple syrup and butter sitting on top. That is, until I decided to be more intentional on what I put in my mouth, and start the lean towards gluten free eating. Cooking gluten free is a whole other animal and one I hope to master in time. I devised this recipe to help conquer my fear of cooking without gluten and as a way to entice my husband into joining me on my journey.

Gluten Free Pancakes with Orange Maple Butter are light, fluffy and surprisingly delicious.  My husband Tim, a sworn white bread, whole wheat and gluten eater loved them. He suggested skipping the maple syrup on top, “the pancakes have  enough sweetness to stand on their own”. I’m on the fence on this one, so I will let you judge for yourself.
