Summer Grilled Potato Vegetable Medley


Summertime Bbq Side Dish: Summer Potatoes Summer Grilled Potato Vegetable Medley 

Bursting with color and fresh tasting flavor. These simple grilled potatoes can be put together in less than 10 minutes. Grilled alongside your favorite entree, no muss, no fuss; leaving you plenty of time to spend with family and friends.

Summer Grilled Potato Vegetable Medley

Serves: 6
Ingredients
  • 4-5 red potatoes, srubbed, eyes removed, medium diced
  • 1 red pepper, seeds removed, diced
  • ½ Maui or Walla Walla onion (sweet), diced
  • 2 ears fresh corn, cut from cob
  • 1½ tsp fresh chopped rosemary
  • 1 - 2 tsp sea salt, to taste
  • 1 tbsp olive oil
  • ¼ tsp freshly ground black pepper
Instructions
  1. Place all ingredients in a large bowl and toss well so all vegetables are coated with olive oil.
  2. Prepare 6 rectangles of heavy duty aluminum foil at least 16 inches long.
  3. Place potato mixture, divided into 6 portions, in center of aluminum foil. Seal foil around potatoes by bringing lengthwise edges together first and folding edges together tightly to form a good seal. To the same to each end, keeping potatoes in the middle (see Picture below).
  4. Place packets on hot grill for 22-25 minutes, turning packets half way through cooking time.
  5. Remove packets from grill (they will be hot) and allow to cool for a few minutes prior to opening. Hot steam and juices may be released from packets, so use caution when opening.
  6. Serve in individual packets, or remove Summer Grilled Potato Vegetable Medley from packets and serve on a platter.
