25 Days of Christmas Cookies: Day 24 & 25 Cookies, Fast and Furious

It’s Christmas Eve and everything is always nuts with preparations for the evening and the big day tomorrow. If you need cookies in a hurry Kris Kringle Cookies and Reese’s Peanut Butter Cookies really deliver. Each cookie can be prepared and ready to eat in 30 minutes or less. Clean up is also a snap, because everything goes into one bowl, and they look and taste delicious.

Christmas is only four days away. A gentle reminder for the one or two of you who may have forgotten and are not scrambling here and there to get all your Christmas preparations in order. I usually fall into the scrambling category. Thankfully this year, most of my shopping is done, cookies are baked, and I can sit back and enjoy these final days with family and friends, leading up to Christmas.

For those of you that are still scrambling, these last four days will feature cookies that are simple and quick to throw together, healthy and delicious to boot.

No-Bake Paleo Almond Joy Bites have a characteristic coconut, almond and chocolaty taste of an almond joy bar, without all the guilt. The recipe is also super easy. Wonderful yummy deliciousness in a matter of minutes is my kind of cookie.

Okay, I know this is not a Christmas quote but today I needed a little encouragement. This cookie post is kicking my behind.

I had my day all planned out when I awoke this morning, which included a trip to the dentist, Christmas shopping with the hubs, dinner out with my kids, and lastly baking a quick and simple batch of Gluten Free Almond and Pecan Sandies when I got home. All went well (if you don’t include the going to the dentist and fighting crowds at the mall part), until it was time to take the cookies out of the oven. I have never seen an uglier batch of cookies in my life. The taste is incredible, but something, somehow went terribly wrong.

So please excuse the wonderful mess of delicious almond flour, butter, pecans and vanilla. If you are brave enough to try them for yourself, let me know how yours turn out. In the meantime, I am exhausted and going to skip the milk and cookies and go straight for a little holiday spirits.
