Okay, I know this is not a Christmas quote but today I needed a little encouragement. This cookie post is kicking my behind.
I had my day all planned out when I awoke this morning, which included a trip to the dentist, Christmas shopping with the hubs, dinner out with my kids, and lastly baking a quick and simple batch of Gluten Free Almond and Pecan Sandies when I got home. All went well (if you don’t include the going to the dentist and fighting crowds at the mall part), until it was time to take the cookies out of the oven. I have never seen an uglier batch of cookies in my life. The taste is incredible, but something, somehow went terribly wrong.
So please excuse the wonderful mess of delicious almond flour, butter, pecans and vanilla. If you are brave enough to try them for yourself, let me know how yours turn out. In the meantime, I am exhausted and going to skip the milk and cookies and go straight for a little holiday spirits.

I stopped to visit and found this bundle of cookies, I just bookmarked for later baking. I am learning more about Gluten free and other flours to use so these will be nice to try.
