As the weather turns cold, I turn from grilling outdoors, making simple meals and light cooking. I crank up the oven, pull up my sleeves and get my baking mojo on. One of my favorite things to do is bake cookies. Each year it’s a new challenge to come up with that special cookie everyone will enjoy. As I was flipping through my cookbooks and searching the web I came across the Betty Crocker White Chocolate Macadamia Nut Cookie; the perfect cookie to riff off of.

White Chocolate Coconut Macadamia Nut Cookies

HOW TO MAKE A GREAT COOKIE AMAZING

  • Quality ingredients: Use the best ingredients you can afford
  • Don’t be afraid to add a few extras: Coconut, White Chocolate, Macadamia Nuts, etc…
  • Make them pretty:  Go the extra mile and package the cookies up prettily. It’s a great way to say you care.

White Chocolate Coconut Macadamia Nut Cookies

For National Cookie Month I was given the cutest cookie tray packaging from Wilton. While known for their great bake ware, I was excited to see all the beautiful packaging for every type of occasion. The cookie tray kit is perfect for gift giving. The trays are pretty and come with cellophane wrapping, ribbon and adorable tags.  Well worth the price and I don’t have to worry about trying to get my plate back. I love it.

White Chocolate Coconut Macadamia Nut Cookies

White Chocolate Coconut Cookies are the perfect combination of salty and sweet. A special cookie everyone is sure to enjoy.
Ingredients
  • 1 cup packed India Tree Dark Muscavado Baking Sugar (can use brown sugar)
  • ½ cup Organic Sucanat , unrefined sugar (can use granulated)
  • 1 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 2 egg
  • 2¼ cups white whole wheat flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 6 ounces white chocolate, cut into chunks
  • 6 ounces) macadamia nuts, coarsely chopped
  • 1 cup flaked coconut
Instructions
  1. Heat oven to 350°F.
  2. Beat sugars, butter together until fluffy with electric mixer.
  3. Add vanilla and eggs, beat well.
  4. Stir in medium sized bowl flour, baking soda and salt.
  5. Add to sugar mixture and mix until all together.
  6. Stir in white chocolate, coconut and nuts.
  7. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
  8. Bake 10 to 12 minutes or until light brown.
  9. Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

    I love how thick and golden brown these are! Though I can’t eat macadamias, I know the coconut -white chocolate is a delicious combination! (The other commenters make it clear that the macadamias are a good addition to that combo!) They look great packaged up for gift giving!
