25 Days of Christmas Cookies: Day 17 – Snickerdoodle Bars

December 16, 2013 by Shari Eckstrom Leave a Comment

Fail not to call to mind, in the course of the twenty-fifth of this month, that the Divinest Heart that ever walked the earth was born on that day; and then smile and enjoy yourselves for the rest of it; for mirth is also of Heaven’s making.  ~Leigh Hunt

During the past month as I gathered recipes for 25 Days of Christmas Cookies a request for snickerdoodles was made.  I am a big fan of this cookie so including them in my line up was not a difficult decision to make. While researching for the perfect recipe I came across a snickerdoodle bar that was a bit different then the norm and enticed me into trying a bar cookie instead.

This simple snickerdoodle bar requires no cookie dough balls, no need for rolling in cinnamon sugar, and is quick and easy to throw together with the classic snickerdoodle taste.  Added bonus, your whole house will smell like cinnamon toast.

25 Days of Christmas Cookies: Day 16 – Melting Moments

December 15, 2013 by Shari Eckstrom Leave a Comment

“When we recall Christmas past, we usually find that the simplest things – not the great occasions – give off the greatest glow of happiness.”  ― Bob Hope

Melting moments were one of my favorite cookies at Christmas time  growing up.  They were simple to make and there was something about rolling  balls in coconut,  smashing them with a fork and putting a maraschino cherry or pecan in the center that satisfied my need for creativity. As an adult, I searched for years to find the familiar recipe that was always pasted on every cornstarch box with no success. And then there came Google, where everything is available at the click of a mouse, and voila, I have found the recipe at Argo and Kingsford Cornstarch. You can’t go wrong with these cookies.

Melting moments are versatile. Whether these cookies are rolled in coconut, sprinkle with crushed peppermints or dolloped with a cherry, imagination is your only limitation. I add cocoa powder to a batch for an additional variation. Not only are these cookies beautiful, but they truly do melt in your mouth. If you only have time to bake one cookie, these are the ones for you.

25 Days of Christmas Cookies: Day 15 – Chocolate Melting Snowmen

December 14, 2013 by Shari Eckstrom Leave a Comment

Something about an old-fashioned Christmas is hard to forget.
-Hugh Downs (1921- ), American newscaster.

Christmas is about celebrating the birth of Christ and recognizing the significance of that fact. It is also about family gathering and spending time together. Today, my son and his beautiful wife arrive to spend 12 glorious days with us and I for one am so excited I can barely contain myself.

My son and his wife live in Japan and I only have the opportunity to see them once every couple of years, thus my excitement at their visit. The house is clean, decorations are spread and we certainly need not worry about cookies. My only sadness is that my daughter and her fiance can not be here to share in our holiday celebrations.

You who have children still at home, be sure to hold them close and treasure the moment you have together. Time flys all too quickly.

I love the chocolaty melting snowmen, they are so adorable. I had to try my hand at making them, if only for novelty’s sake. Turns out they are not only adorable but tasty too. I was surprised to find peanut butter in the cookie and loved the chocolaty peanut taste. They go together quickly and are easy to make. A simple recipe well worth trying.

25 Days of Christmas Cookies: Day 14 – Big Soft Ginger Cookies

December 13, 2013 by Shari Eckstrom Leave a Comment

Gifts of time and love are surely the basic ingredients of a truly merry Christmas.  ~Peg Bracken

I am not a huge fan of shopping at Christmas time, or any other time for that matter, but especially at Christmas. I won’t be found out in the middle of the night lining up to get the best deal on the latest new craze. I will choose my warm cozy bed to saving a few bucks every single time.

This is why I think shopping online is the greatest idea ever. I can have all my Christmas shopping done in less than a day without ever needing to leave the comfort of my favorite arm chair.  I justify my online shopping by pointing out all the extra time I have to concentrate on other Christmas things. Works for me. Tim has decided he will do all the Christmas shopping this year. This works for me too!

Big Soft Ginger Cookies are soft, chewy, and fabulous.  Ginger, cloves, and cinnamon spices help set the mood for everything Christmas.
