25 Days of Christmas Cookies: Day 13 – White Chocolate and Coconut Sandwich Cookies

Today marks the halfway point of 25 Days of Christmas Cookies. The intention, when I first came up with the idea of Holiday Cookies, was simply to introduce others to my blog site by enticing them with a plethora of delicious cookie recipes. The exposure has been wonderful, but I have found that something greater has occurred in the process. In actively engaging with others, hearing their stories, and baking favorites, I have found a Christmas spirit I haven’t experienced for quite some time. Perhaps it is not the expensive store bought gifts that are given with little thought that is important, but time spent in engaging, hearing and giving of one’s time and talent that  makes the difference after all.

White Chocolate and Coconut Sandwich Cookies feature delicious coconut crunch cookies with a luscious white chocolate sandwiched in between. Absolutely lip-smacking delicious.

25 Days of Christmas Cookies: Day 4 - Lemon Cardamom Wreaths. I love the simplicity of flavors in this cookie. The cardamom and lemon play well together, giving a wonderful citrus flavor in every bite, and every time I open the container of cookies, the spicy fragrant aroma greets me with the certainty of Christmas.

Sometimes, even at Christmas, all I want is a peanut butter cookie. No frills, no fancies, just simple old fashioned goodness. These peanut butter cookies fill the bill and then some. Crunchy peanut butter on the inside with chopped and salted peanuts sprinkled on top.  Need I say more?

25 Days of Christmas Cookies: Day 11 – Macadamia Nut Dream Bars

While today we don hats and mittens and travel door to door wishing our neighbors good cheer in song, caroling originally had little to do with Christmas. The carols of the 12th and 13th centuries were liturgical songs reserved for church processionals. The type of caroling we’re more familiar with didn’t arrive until England’s Victorian era. Many popular seasonal songs — “Hark! the Herald Angels Sing!,” “The First Noel,” and “God Rest Ye Merry Gentlemen” — were written around that period. – A Brief History of Christmas Traditions, Time.Com

Christmas caroling door to door was a wonderful tradition I for one, wish would be revived again. A whole generation has missed out on a tradition that used to be very special. I have fond memories of bundling up in heavy coat, scarf and mittens, climbing onto a flatbed truck with other kids from my church youth group and caroling all through our neighborhoods. It was a magical time and helped to bring the reason for the season home to me more than any other activity I participated in. After caroling, we all came back to our house to stand by the fire to warm up and drink  hot chocolate and eat freshly baked cookies.  Spread the word, bundle up your kids and head to your neighbors and sing a song or two. Maybe we might be able to bring this tradition back.

Macadamia Nut Dream bars are a new twist on an old favorite, the seven layer bar. I chose to switch things up a bit with vanilla wafers as the cookie crust base and top it off with macadamia nuts. Beware, these bars are addictive. I bet you can’t eat just one.

25 Days of Christmas Cookies: Day 10 – Coconut Macaroons Dipped in Chocolate

Every year as the presents are wrapped and placed under the Christmas Tree a tag is placed to label who is to receive the gift and who the present is from. Even though the kids are grown, and some with children of their own, I still find myself placing from Santa on a large portion of the gift tags. I am quite certain that everyone knows the gift is not from Santa, but there is something about the magic that the belief in Santa brings that lingers even still.

Coconut Macaroons Dipped in Chocolate right from the oven are deliciously crisp on the outside with a soft chewy center. When dipped in chocolate with a drizzle on top these cookies are taken to a whole new level. A quick and easy recipe to throw together with outstanding results. Tuck a roasted almond or two in the center before baking for a special added treat.
