Iced Ginger Stars

 Iced Ginger Stars are crisp and gingery, with just a touch of sweetness. They make the perfect dunking cookie and can be used for edible Christmas ornaments.  

Iced Ginger Stars are crisp and gingery, with just a touch of sweetness. They make the perfect dunking cookie and can be used for edible Christmas ornaments. Place a bean at the top of the cutout star prior to placing in the oven and remove after baking while cookie is still warm. This creates a perfect hole to thread a brightly colored ribbon through for hanging on the tree

Ginger Stars
  1. 5 Cups All Purpose Flour, plus a little extra, if the mixture is sticky
  2. 2 tsp baking soda
  3. 1 tsp ground ginger
  4. 1 tsp ground nutmeg
  5. 1 tsp salt
  6. 1 cup (2 sticks) unsalted butter, softened
  7. 1 cup packed dark-brown sugar
  8. 1 cup dark corn syrup
  9. 2 large eggs
  10. 2 tsps hot water
  11. 2 tsps lemon juice
Glace Frosting
  1. 1 cup confectioners sugar
  2. 1 egg white
  3. 1 tsp vanilla extract
  4. colored dye
To make the ginger stars
  1. Mix flour, soda, ginger, nutmeg, and salt in a large mixing bowl.
  2. In a separate large bowl, beat the butter and brown sugar until light in color and fluffy, about 5 minutes.
  3. Beat in the corn syrup, eggs, hot water, and lemon juice until well blended.
  4. Using a wooden spoon, gradually work in the flour mixture until a firm dough has formed. If the mixture feels too sticky to handle easily, add a little more flour.
  5. Divide the dough into 4 equal portions and wrap in plastic wrap.
  6. Refrigerate for 2 hours or until well chilled and firm.
  7. Butter baking sheets and preheat oven to 350 degrees.
  8. Lightly flour a work surface and rolling pin and roll out 1 of the pieces of dough until it is 1/8 inch thick. Using a star shaped cookie cutter, cut out stars and place on buttered baking sheet.
  9. These cookies will spread a bit so be sure to space them out at least 1 1/2 to 2 inches apart.
  10. If using for ornaments, place bean at top of star, remove after baking while cookies are still warm.
  11. Bake for 10-12 minutes, cool for a few minutes then move to wire rack to cool completely before glazing.
  12. Continue to roll, bake, and cool the remaining dough in the same way until all cookies have been baked and cooled.
To make the glace frosting
  1. Beat the sugar and egg white together in mixing bowl. Stir in the vanilla extract. If color is desired, divide glace into separate bowls and add desired color.
  2. Drizzle the frosting over the cookies, or pipe frosting using frosting bag and #2 frosting tip.
Notes
  1. Store bought, ready made icing can be used in place of the glace if desired.
