Peppermint Stick Cookies

25 Days of Christmas Cookies: Day 6 - Peppermint Stick Cookies  

Peppermint Stick Cookies have a refreshing cool mint flavor with a beautiful festive look.  Think North Pole, Santa, Elves and a Sleigh. Perfect to serve with either a frosty mug of milk or a steaming cup of hot cocoa.

Ingredients
  1. 1 cup unsalted butter, softened
  2. 1 cup sugar
  3. 1 Egg
  4. 2 teaspoons mint extract
  5. 1/2 teaspoon vanilla extract
  6. 2-3/4 cups all-purpose flour
  7. 1/2 teaspoon salt
  8. red food coloring
  9. green food coloring
  10. 1 cups white chocolate chips
  11. 1 cup chocolate chips
  12. Crushed mint candies
Instructions
  1. In a large bowl, cream butter and sugar until light and fluffy.
  2. Beat in egg and extracts.
  3. Combine flour and salt; gradually add to the creamed mixture and mix well.
  4. Set aside half of the dough.
  5. Divide remaining dough in half; add green food coloring to one portion and red food coloring to the other.
  6. Wrap dough separately in plastic wrap. Refrigerate for 1-2 hours or until easy to handle.
  7. Divide green and red dough into 24 portions each. Divide plain dough into 48 portions. Roll each into a 4-in. rope.
  8. Place each green rope next to a white rope; press together gently and twist.
  9. Repeat with red ropes and remaining white ropes.
  10. Place 2 in. apart on ungreased baking sheets.
  11. Bake at 350° for 10-12 minutes or until set.
  12. Cool for 2 minutes before carefully removing from pans to wire racks to cool completely.
  13. In a microwave, melt chips; stir until smooth.
  14. Dip cookie ends into melted chips; allow excess to drip off.
  15. Sprinkle with crushed candies and place on waxed or Parchment paper.
  16. Let stand until set.
  17. Store in an airtight container.
  18. Yield: 4 dozen.
Notes
  1. The original recipe called for white chocolate only but I love the taste of dark rich chocolate with peppermint so I had to mix it up a bit. Mint chocolate chips would also work well.
