Big Soft Ginger Cookies

25 Days of Christmas Cookies: Day 14 - Big Soft Ginger Cookies  

Big Soft Ginger Cookies are soft, chewy, and fabulous.  Ginger, cloves, and cinnamon spices help set the mood for everything Christmas.

Ingredients
  1. 3/4 cup butter(1 1/2 sticks), softened
  2. 1 cup sugar
  3. 1 Egg
  4. 1/4 cup molasses
  5. 2-1/4 cups all-purpose flour
  6. 2 teaspoons ground ginger
  7. 1 teaspoon baking soda
  8. 3/4 teaspoon ground cinnamon
  9. 1/2 teaspoon ground cloves
  10. 1/4 teaspoon salt
  11. Additional sugar
Instructions
  1. In a large bowl, cream butter and sugar until light and fluffy.
  2. Beat in egg and molasses.
  3. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture and mix well.
  4. Roll into 1-1/2-in. balls, then roll in sugar.
  5. Place 2 in. apart on ungreased baking sheets.
  6. Bake at 350° for 10-12 minutes or until puffy and lightly browned.
  7. Remove to wire racks to cool.
  8. Yield: 2-1/2 dozen.
