Snickerdoodle Bars

25 Day of Christmas Cookies: Day 17 - Snickerdoodle Bars  

This simple snickerdoodle bar requires no cookie dough balls, no need for rolling in cinnamon sugar, and is quick and easy to throw together with the classic snickerdoodle taste.  Added bonus, your whole house will smell like cinnamon toast.

Ingredients
  1. 1 cup butter, softened
  2. 2 cups packed brown sugar
  3. 2 Eggs
  4. 3 teaspoons vanilla extract
  5. 2-2/3 cups all-purpose flour
  6. 2 teaspoons baking powder
  7. 1 teaspoon ground cinnamon
  8. 1/4 teaspoon ground nutmeg
  9. 1/2 teaspoon salt
Topping
  1. 3 teaspoons sugar
  2. 1 teaspoon ground cinnamon
Instructions
  1. Preheat oven to 350°.
  2. In a large bowl, cream butter and brown sugar until fluffy.
  3. Beat in eggs and vanilla.
  4. In another bowl, whisk flour, baking powder, spices and salt; gradually beat into creamed mixture.
  5. Spread into a greased 11 x 7 baking pan.
  6. Mix topping ingredients; sprinkle over top.
  7. Bake 40 minutes or until set and golden brown. Cool in pan on a wire rack. Cut into bars. Store in an airtight container.
