No-Bake Paleo Almond Joy Bites

25 Days of Christmas Cookies: Day 22 - No-Bake Paleo Almond Joy Bites  

No-Bake Paleo Almond Joy Bites have the characteristic coconut, almond and chocolaty taste of an almond joy bar, without all the guilt. The recipe is also super easy. Wonderful yummy deliciousness in a matter of minutes is my kind of cookie.

No-Bake Paleo Almond Joy Bites

Ingredients
  1. 1/2 cup almond flour
  2. 1/2 cup unsweetened shredded coconut
  3. 1/2 cup coconut butter (not coconut oil)
  4. 1/4 cup honey
  5. 1/2 cup dark chocolate chips
  6. 1/2 tsp vanilla extract
  7. 1/4 tsp sea salt
  8. 2-3 tbsp lightly toasted coconut
  9. 10 whole raw almonds
Instructions
  1. Combine all ingredients in a food processor and pulse until completely combined.
  2. Form batter into 10 balls and place on parchment or wax paper. Flatten balls with the palm of your hand.
  3. Place one almond on top of each cookie and lightly sprinkle with toasted coconut
  4. Chill in the refrigerator for at least 60 minutes before serving.
  5. Makes 10 cookie bites
Notes
  1. Variation: for lightly colored cookies stir in the chocolate chips after pulsing in the processor. That way, the cookies will remain a lighter almond color with chips throughout. I found that I like the chocolate infused all through the cookie for a more chocolate covered flavor and a darker cookie.
