Blue corn Tortillas

 

 I love the color and flavor that Blue Corn Tortillas bring to my pure food dishes.  They have a unique hearty texture, more protein than regular corn tortillas and are naturally gluten free. Delicious for enchiladas, tacos or just as they are hot off the grill. Be sure to come back next Saturday for the recipe for my Carne Asada Street Tacos where I will put these Blue Corn Tortillas to good use.

Blue Corn Tortillas

Ingredients
  1. 1 1/2 cups blue corn flour
  2. 1 1/4 cup masa
  3. 1/2 tsp white pepper
  4. 1/2 tsp salt
  5. 1 1/4 cup water (or as needed)
Instructions
  1. In a medium bowl, add flour, masa,salt, and white pepper together.
  2. Add 1 cup water to begin with and mix together with your hands.
  3. If mixture is a bit dry add more water until the consistency of play dough.
  4. Knead the dough for 1-2 minutes, replenishing the flour on your hands and work surface as needed(dough will be a bit sticky).
  5. Pinch off 8 portions of dough and form into balls. After forming place in dampened towel and cover to prevent the dough from drying out until ready to cook.
  6. Lightly brush your griddle with oil and remove excess with paper towel.
  7. Heat griddle over medium-high heat.
  8. While griddle is heating begin to flatten your balls into tortillas using a tortilla press or two like sized pie pans.*see note below
  9. Once tortilla balls are flattened, place on heated grill for 20 – 30 seconds. Turn and repeat until tortillas begin to puff slightly, no longer look wet in the middle and are lightly browned. Usually about 2 minutes in all.
  10. Place in covered dish towel to keep warm.
Notes
  1. When flattening your tortillas it works best to place the ball between two pieces of heavy duty plastic for best results. I use a gallon size ziplock freezer bag, cut in two pieces to the size of my tortilla press.(see picture for example)
  2. If using pie pans cut your plastic to size. Place one piece of plastic in pie pan add your tortilla ball and then cover with the second sheet of plastic. Nest the second pie pan on top and push firmly down to form the tortilla.
