25 Days of Christmas Cookies: Day 7 – Chai Gingerbread Men

German Lebkuchen, which is gingerbread, is probably the world’s first cookie associated with Christmas. It is from Germany, where many holiday traditions started. – Tampa Bay Times

Chai tea with soy milk is one of my favorite afternoon treats, so when I saw the Chai Gingerbread cookie recipe when perusing through my Family Circle magazine it was an easy decision to add these spicy little men to my 25 days of christmas cookie list.  Cardamom, ginger, cinnamon, cloves and black pepper give these cookies a deliciously spicy edge. A recipe I will enjoy making not just at Christmas time but all year long.

25 Days of Christmas Cookies: Day 5 - Chocolate Dipped Pistachio Crescents are a small nod to a simpler time. Buttery crescents that melt in your mouth, dipped in rich chocolate and covered in nuts. It doesn't get much better than that.

Day 4 – Lemon Cardamom Wreaths

25 Days of Christmas Cookies: Day 4 - Lemon Cardamom Wreaths. I love the simplicity of flavors in this cookie. The cardamom and lemon play well together, giving a wonderful citrus flavor in every bite, and every time I open the container of cookies, the spicy fragrant aroma greets me with the certainty of Christmas.

Day 3 –  Black and White Peppermint Bars

 Iced Ginger Stars are crisp and gingery, with just a touch of sweetness. They make the perfect dunking cookie and can be used for edible Christmas ornaments.  Day 1 –Russian Rocks

25 Days of Christmas Cookies: Day 6 – Peppermint Stick Cookies

All the lights are up at Pure Grace Farms thanks to my wonderful and dedicated husband Tim. Each year I ask him to do a little bit more for me with the decorations outside and he never disappoints. I love the yin and yang of our relationship. I ask and he delivers. Isn’t that the way it is supposed to be?  

Peppermint Stick Cookies have a refreshing cool mint flavor with a beautiful festive look.  Think North Pole, Santa, Elves and a Sleigh. Perfect to serve with either a frosty mug of milk or a steaming cup of hot cocoa.

25 Days of Christmas Cookies: Day 5 – Chocolate Dipped Pistachio Crescents

One of my favorite moments on Christmas morning as a child was to sneak out of bed early in the wee hours while everyone else was still sleeping to see what Santa had left in my stocking. My mom and dad decided early on that stockings were fair game. I realize now as an adult, this allowed them a few extra hours of precious sleep on Christmas morning, but at the time it was pure heaven for me to explore all the bounty stuffed within my sock so carefully hung by the chimney. 25 Days of Christmas Cookies: Day 5 - Chocolate Dipped Pistachio Crescents are a small nod to a simpler time. Buttery crescents that melt in your mouth, dipped in rich chocolate and covered in nuts. It doesn't get much better than that. Our family didn’t have the special stockings one finds today, with names embroidered on them and  intricate embellishments. No, each year I and my siblings went to our sock drawers and looked for the longest, sturdiest, socks we could find and tacked them on the chimney ledge hoping that we would find them filled to the brim with candy and trinkets come Christmas morning. Inevitably I would find the required apple, orange, and various nuts still in their shells, hard penny candy and maybe a chocolate or two. It was enough, and I was grateful.

25 Days of Christmas Cookies: Day 4 – Lemon Cardamom Wreaths

Today is day 4 of 25 Days of Christmas Cookies and wouldn’t you know it, I have come down with a nasty cold. Fortunately, I did not have to make these Lemon Cardamom Wreaths today or I would have been in trouble.

Instead, I sit here writing with Eucalyptus oil smeared on my chest, a glass of milk and  a half eaten Lemon Cardamom Wreath just to my right.
