25 Days of Christmas Cookies: Day 1- Russian Rocks

November 30, 2013 by Shari Eckstrom 2 Comments

Christmas in Bethlehem. The ancient dream: a cold, clear night made brilliant by a glorious star, the smell of incense, shepherds and wise men falling to their knees in adoration of the sweet baby, the incarnation of perfect love. – Lucinda Franks

I love Christmas and everything that goes along with it. Decorations, lights, and holiday baking begin the day after Thanksgiving and carry on until well after New Year’s Day.  The trappings and tinsel of the holiday is magical I have to admit, but the real reason behind all of the glitter is what I like best. Russian Rocks are a buttery, flaky, pecan delight. A perfect companion alongside a steaming cup of hot cocoa on a cold wintry night. Delicious, pure and simple. To me, the birth of a baby, born in a manger is more than just a scene displayed once a year. The celebration of that birth and the realization that this little baby grew up to be my Saviour and King is what delights me and fills me with a desire to spread that joy around. Yes, it is more intense this time of year but my desire has always been to be excited all year long and not just for one month of the year.  A worthy goal I will continue to strive for.
