Coming Home

I made my way to San Diego this weekend and let me tell you it has been really rough. I mean, leaving 20 to 30 degree bone chilling weather, where I was bundled and snuggled up tight, to sit on a patio in sunny Southern California, drinking coffee and enjoying fresh oranges from a tree only 10 feet from my table, gee, it’s tough to handle. I’ll try though, I’m definitely giving it my best shot. Gingered Date Breakfast Bar- Pure and Simple Funny thing when one comes home, the roles of the past sneak back all too easily. I am a competent woman, strong and determined, pushing to succeed in all that I do, but as the youngest of three strong determined women in our family, I begin to blend and start to lose myself a bit.

Gingered Date Breakfast Bar- Pure and Simple In past times, this coming home and all it entailed, bothered me. I pushed hard to be seen and heard, constantly competing for every scrap of attention I could muster. But this trip home is different. I guess I have aged and mellowed over time. I realize, I am enjoying the opportunity to sit back and just be. It has finally sunk in, I have nothing to prove. This trip is going to be awesome! Oatmeal-Date-and-Almond-Br3 Gingered Date Breakfast Bars are gluten free and bring a new level of deliciousness to a quick on the go breakfast or snack at anytime of day. Dates and ginger make a great combination and add a perfect touch of sweetness. A great way to bring a smile to your face early in the morning.

Gluten Free Sweet Potato Hash

I am not normally a creature of habit, but when it comes to going out for meals, all bets are off. Nothing irks me more than to order something off a menu, only to find it is something I could have made easily at home. When I pay for a meal, I am looking for something extraordinary, a masterpiece I would be hard pressed to duplicate due to the complexity of the dish, or because it is so perfectly done I wouldn’t even want to try. Sweet Potato Hash: Gluten Free - Pure and Simple Unfortunately, for some unknown reason, I rarely make the right choices at a restaurant. I try, I really do, but as I watch in anticipation the meals being served and set before everyone at the table, invariably I want what everyone else has chosen, not what is plunked down directly in front of me.

Sweet Potato Hash: Gluten Free - Pure and Simple Therefore, I have taken to finding one thing I like off the menu at the restaurants we frequent and ordering it habitually. At the Cheesecake factory, where I go when I am looking for a little comfort food, it is Shepards Pie (no matter how many times I have tried to duplicate the luscious tomatoey sauce that envelopes the beefy vegetables, I just can’t get it right). If I crave something raw, crunchy and delicious, I head to Kings Fish House for a Poke and Seaweed Salad that satisfies on all counts. At Goldy’s, Boise’s boutique breakfast cafe, I order the crispy and savory Corned Beef Hash, a winner every single time.

Sweet Potato Hash: Gluten Free - Pure and Simple This habitual ordering drives Tim, my husband , crazy. He who could never conceive of doing such a thing, since he seems to choose the best meals every single time. One day, when I grow up, I want to be just like him.

Sweet Potato Hash: Gluten Free - Pure and Simple Todays recipe for my Sweet Potato Hash is not in competition with Goldy’s Corned Beef Hash, not by a long shot, but would be a great addition to their menu, if I do say so myself. It is uniquely delicious, featuring sweet potatoes, chicken sausage, sweet onions and spinach. Seasoned with garlic and a touch of chipotle, bringing great flavors together for a big, bowl of taste.

Good Morning Breakfast: Hello Organization

Organizing is one of my strong suits when it comes to cupboards, furniture, and other peoples lives. Just ask my husband, he will tell you I am great at organizing his life. Okay, maybe not, but that’s another story.

At the moment I am going through every niche and corner of our house with a fine tooth comb. The clutter and stuff that is squirreled away in cupboards and corners I could swear I packed off to the local youth ranch 6 months ago. But here it is, in all its glory, multiplying faster than a rabbit and threatens my path to simplicity and sanity.

Potato and Egg Baskets: Gluten Free - Pure and Simple You have heard that old saying when ringing in a New Year, “out with the old, and in with the new,” right?  I find I am perfectly willing to part with old shoes I never wear, and dishes collected over the years that sit around and gather dust. That is the easy part. The greater difficulty will be to stick to the decision I have made not to accumulate more stuff. Shocking I know, especially in our society of commercialism with messages everywhere we look  appealing to us to buy, buy, buy.

Potato and Egg Baskets: Gluten Free - Pure and Simple This year, I am saying no. I don’t need another widget, whatchamacallit, or whoosit. I am taking back my home, living simpler, and giving more to those things that money can’t buy. Small, organizable, actionable steps, to reclaiming my sanity in a crazy mixed up world. Who’s with me?

Potato and Egg Baskets: Gluten Free - Pure and Simple Potato and Eggs Baskets are perfect when you have a little extra time to spend in the kitchen. Start with a potato crust, add deliciously seasoned eggs with chicken sausage, sun dried tomatoes and parmesan cheese. Warm from the oven, sprinkle a bit of goat cheese on top and voila, a hearty gluten free breakfast fit for a king.

Extras can be put in the fridge, and warmed up in the microwave for a quick easy breakfast later in the week. Work a little today, and save a bit of time tomorrow, now what could be better than that?
