Flour has been a main topic of conversation as of late. Especially with many who have issues with Gluten. While I have not had any particular problems that I am aware of, I do know many that do. Whether you are trying to eat gluten-free or are looking to increase the whole grains you eat in your diet, a little information may help in the choices you make. I’m going to keep my definitions extremely basic but will give plenty of links for you to follow up on if you would like to know more.

Any time flour has been refined you can be sure that a great deal of the nutrients have been removed also. The bleaching process involves a chlorine gas to whiten the flour which can’t be good. Because much of the nutrients have been taken out in the process, a specific amount of nutrients are then returned to the flour. Many of the returned nutrients are not easily absorbed by our bodies.

The Global Healing Center states in their article The Hidden Truth About Enriched White Flour 

Once this stuff has been stripped down, you’re left with a starch. How does your body react to pure starch? The same way it reacts to pure sugar!

There are better alternatives to using Enriched Bleached White Flour. Let’s take a look at my favorite option.

White Whole Wheat Flour 

I have been using white whole wheat flour for over a year now and have in the last few months eliminated Enriched Bleached White Flour from out diets completely. I haven’t missed it a bit. When I am substituting White Whole Wheat Flour for enriched flour I may have to add a touch more liquid to the recipe, but other than that everything else remains the same.

What is White Whole Wheat Flour?

Clean Cuisine says it this way in What is white whole wheat flour? Is it healthy? 

White whole wheat flour is every bit as nutritious as whole wheat flour (it contains the nutrient-rich germ and the fiber-rich bran), it just bakes better and tastes more like the unhealthy all-purpose flour.

Whole Wheat Flour  and other Whole Grains

Louise Tremblay with Demand Media in Healthy Facts About Whole-Wheat Flour Vs. White has this to say about Whole Wheat Flour…

White flour is made from heavily refined and processed wheat grains, while whole-wheat flour is made from grains that have not undergone heavy processing.

As stated before, the nutritional values of the two are vastly different, including the effects on blood sugar, fiber content, vitamins and minerals. This is a good reason to try and infuse more healthy grains into your diet.

Gluten-Free Flour

My Gluten Free Kosher Kitchen in their Kosher Celiac Cookery guide says this about Gluten-Free…

Flour is basically the powder obtained by grinding grains, seeds and tubers. Many plants other than wheat-can be made into a flour and include maize, chickpeas, tapioca, chestnut and potatoes. For those who suffer a wheat or gluten allergy (coeliac disease) or people who are intolerant, these flours offer an alternative to wheat.

The take away here is that there are alternatives to the flours one uses and plenty of choices. If you are trying to eat more of a real food or whole food diet, avoiding highly processed refined foods is a great place to start. If you are new to the idea, start slowly and begin to replace some of the enriched white flour with white whole wheat. You will be amazed at how easily the changes will come.

Our Daily Bread

As I sit down to right my post today featuring a wonderfully flavored whole grain bread, I begin to ponder on what exactly my daily bread is. What is the one thing I need every day to be at my best and to live well in body, soul and spirit?  This question sends me off on a little journey, and gets me thinking on a myriad of things that I need or think I need, every single day. Whole Grain Honey Wheat Bread : Pure and Simple Of course the obvious comes to mind first, things like the air I breathe, food I eat, water to drink, exercise that keeps me strong and healthy, and plenty of sleep to help restore. Not much of a stretch there, and easy enough to come up with. The needs of the soul and spirit take a little more digging.

Whole Grain Honey Wheat Bread : Pure and Simple If I had to pin down a few, I would say, my soul and spirit need laughter, to help ease my heart during difficult times. I long for connectedness with other human beings and the world around me, to prevent me from living a life of self-absorption and self-centeredness. And lastly, I crave acceptance, a knowing that I am loved and cared for, regardless of my faults and failures.  Whole Grain Honey Wheat Bread : Pure and Simple I may recognize I need these things daily, but am aware that receiving them isn’t a sure thing. I don’t regularly eat like I should, exercise, or get proper amounts of sleep to take care of my physical needs. Regarding my soul and my spirit, laughter doesn’t always come to take away the tears, and I willfully choose to ignore others around me and live a bit in isolation. Even so, there is one thing I do know, no matter where I am on the scale of daily bread for the day, is that I am deeply and perfectly loved, even when I fail, even when I’m ugly and self-centered, and even when my life is terribly messy.

Whole Grain Honey Wheat Bread : Pure and Simple Great comfort in the midst of my journey and thanks be to God who loves me so profoundly.

Whole Grain Honey Wheat Bread : Pure and Simple Today’s recipe is for a wonderfully flavored whole grain bread, light, well textured, with just a hint of honeyed sweetness. It won’t fall apart when you slice it for sandwiches and is equally delicious toasted. This bread also freezes well. The recipe makes two loafs so pop one in the freezer for later.

Whole Wheat Apple and Green Tomato Bread: Pure and Simple

Today’s post was supposed to be a slam dunk. I had my recipe, fresh ingredients, and high hopes of beautiful pictures snapped perfectly, decorating my post like never before. The plan was perfectly formed in my mind, certainly nothing could go wrong. Whole Wheat Apple and Green Tomato Bread is bread is made with 100% white whole wheat flour but you would never know it by tasting it. This bread tastes even better the day after. Delicious! I waited to prepare my Green Tomato Cake until I was at my daughter’s home babysitting my grandson on my regular Tuesday morning. I specifically wanted to use her bundt pan. She graciously offered it for use anytime I might need it, just the week before. Now you must know, I covet her  bundt pan. It is modern, with all sorts of peaks and valleys in wonderful geometric patterns. It is much more interesting than the one I have had for decades, dull and a bit boring, but trustworthy. During the moments my grandson napped I chopped, grated, stirred and snapped pictures and then lovingly slid that beautiful bundt pan in the oven to bake for its allotted time Whole Wheat Apple and Green Tomato Bread is bread is made with 100% white whole wheat flour but you would never know it by tasting it. This bread tastes even better the day after. Delicious! Oh how beautiful that cake looked when I pulled it from the oven, perfectly browned with flecks of gold and green from the green tomatoes and raisins. I couldn’t wait to get that cake out of the pan and onto its pedestal that was waiting patiently, pleasingly aligned on the table for a picture perfect moment. Whole Wheat Apple and Green Tomato Bread is bread is made with 100% white whole wheat flour but you would never know it by tasting it. This bread tastes even better the day after. Delicious! I am sure you have guessed by now that the best laid plans sometimes go awry and pride definitely goes before a fall (I am sure I will get a prize for overusing metaphors here). Try as I may, I could not get that cake to budge even an inch out of that perfectly formed bundt pan. I am glad my grandson was sleeping because the few choice words I was using were not made for little boys ears. Whole Wheat Apple and Green Tomato Bread is bread is made with 100% white whole wheat flour but you would never know it by tasting it. This bread tastes even better the day after. Delicious! When that cake finally did release it came out in chunks and pieces that was enough to make this grown woman cry. What now am I to do? My post needs to be done. It is Tuesday after all, and that is what I do on Tuesdays. I post! Life as I know it will stop, the world will stop revolving and I will lose all credibility if my post isn’t on Tuesday. Whole Wheat Apple and Green Tomato Bread is bread is made with 100% white whole wheat flour but you would never know it by tasting it. This bread tastes even better the day after. Delicious! I discovered in that moment of raving lunacy that my life did not stop, the world kept revolving, and my credibility is most likely still intact. And with that discovery came a few new ideas that might not have been formed if I hadn’t taken the time to see with new eyes. Whole Wheat Apple and Green Tomato Bread is bread is made with 100% white whole wheat flour but you would never know it by tasting it. This bread tastes even better the day after. Delicious! Continuity is a great idea, but it is okay to throw in a bit of variety now and again. It spices things up and keeps you on your toes. A benefit from this mishap came with the idea of presenting 25 Days of Holiday Cookies with reflections on Christmas around the world, which will start on December 1st (God willing and the creek don’t rise).  I am excited  to share this time leading up to Christmas with you and hope it will be meaningful.

Today’s recipe as you can see is not the Green Tomato Bundt Cake I planned to make. You can find that recipe here . I couldn’t bring myself to try again. The Pure and Simple Whole Wheat Apple and Green Tomato Bread is a worthy and delicious replacement.  I hope you enjoy it as much as I do.
