FRESH BLACK BEAN SPAGHETTI WITH ZOODLES

A few months ago while visiting my sister, she served the most amazing noodles made from zucchini. She spiraled them from a Paderno World Cuisine Plastic Spiral Vegetable Slicer. I had never seen one before and I was instantly enamored.  The world of vegetables was once again changing for me and I knew that this simple piece of equipment would offer some great opportunities for delicious vegan and whole food meals. As soon as I returned home I jumped right on Amazon and ordered one of these little beauties for my very own.  

When my Spiral Vegetable Slicer arrived via UPS I didn’t waste any time and started using it right away. I wasn’t too sure how Tim would take to not having pasta but to my surprise he really enjoyed the raw vegetables. 

Today’s Fresh Black Bean Spaghetti with Zoodles has developed from my more adventurous side. The recipe is gluten free, vegan and uses real food from what I have in my garden at present (except the black beans). I hope you enjoy it.

Black Bean Spaghetti with Zoodles

Serves: 6
Ingredients
  • 1 medium onion, chopped
  • 1 pkg (8 oz) sliced mushrooms
  • 4 cloves garlic, minced
  • 1 medium sweet red pepper, cut into thin strips
  • 3 cups cooked and drained black beans (or 2 15 oz cans, drained and rinsed)
  • 2 cups chopped tomatoes
  • 1 pint tomato sauce (or 2 15 oz cans)
  • 1 (2¼ oz) can sliced ripe olives, drained
  • 2 tsp fresh basil
  • ½ tsp sea salt
  • ¼ tsp pepper
  • 1 cup freshly shaved Parmesan cheese
  • 2 medium (8-10 inch) zucchini, spiraled
Instructions
  1. Add 2 tbsp oil to large saucepan over medium heat.
  2. Add onions, red pepper, garlic and mushrooms. Saute until tender.
  3. Add black beans, chopped tomatoes, tomato sauce, basil, salt and pepper.
  4. Bring to a boil, reduce heat and simmer uncovered, stirring occasionally, about 20 minutes until tomatoes have softened.
  5. Meanwhile, distribute zoodles (sprialed zucchini) onto serving plates.
  6. Spoon cooked sauce over zoodles and top with Parmesan cheese.
  7. Serve immediately.

Zucchini recipes are everywhere you look right now. I for one am grateful… keep them com­ing! I’m always on the look out for ways to use up my zuc­chini. There comes a point in the sea­son when I am peer­ing out the win­dow look­ing for a friend, neigh­bor, a stranger, any­one really, to walk by the house. I have my bag filled with zuc­chini all ready and wait­ing. Pity the poor unfor­tu­nate soul who hap­pens to walk by.

Can you see me run­ning wildly out the door, zuc­chini fly­ing in every direc­tion, scream­ing like a wild woman “zuc­chini, wait, stop, I have zuc­chini.” It scares the liv­ing day­lights out of my neigh­bors. Dur­ing the month of August I’ve actu­ally seen peo­ple sneak­ing past the house look­ing in all direc­tions as if they are ready to run at the slight­est provo­ca­tion. So you see zuc­chini recipes will actu­ally be sav­ing not only me, but the sur­round­ing county as well. Suggestions always welcome.

Garden Fresh Zucchini Fritters Garden Fresh Zucchini Fritters are all about everything good from the garden. These healthy fritters are simple to throw together, high on flavor and will make a believer out of the most reluctant vegetable eater.

Serves: 4
Ingredients
  • 1½ pounds zucchini (about 2 - 8 " zucchini), shredded
  • ¾ cup fresh corn kernels
  • ½ cup finely diced sweet onion
  • ¼ cup diced sun dried tomatoes (dry pack, not in oil)
  • ½ cup bread crumbs
  • 1 egg, beaten well
  • 2 jalapenos, seeds removed, finely diced
  • 2 oz creamy goat cheese
  • 4 tbsp cream (milk can be substituted)
  • 1 tbsp finely chopped cilantro
  • 1 tsp salt
  • ½ tsp cumin, divided
  • ¼ tsp pepper
  • Olive oil for griddle
Instructions
  1. Place grated zucchini in medium sized bowl
  2. Add salt and toss to mix well.
  3. Pour zucchini into fine mesh bag or colander lined with a clean towel. Allow to sit for 10 minutes (salt helps to remove high water content from zucchini).
  4. In the meantime place corn, onions, sun dried tomatoes, jalapenos, cilantro, pepper and ¼ tsp cumin into medium sized bowl used to mix zucchini and salt.
  5. Once zucchini has sat for 10 minutes, wring out as much liquid as possible from zucchini.
  6. Add zucchini to vegetable mixture and stir to combine. Allow to sit about 5 minutes to assist in softening sun dried tomatoes.
  7. Add dried bread crumbs and beaten egg to vegetable mixture and mix thoroughly.
  8. Heat griddle (or frying pan) on high heat.
  9. Scoop out ⅓ cup of vegetable mixture onto hot griddle, pressing down mixture into a patty with spatula.
  10. Allow to cook until well browned on one side, about 3-4 minutes before turning.
  11. Carefully turn fritter over and continue to cook and additional 3-4 minutes until done.
  12. While fritters are cooking, mix goat cheese with cream until smooth and creamy.
  13. Add remaining ¼ tsp cumin and stir to incorporate.
  14. Serve hot fritters immediately with a dollop of goat cheese cream on top.
