  1. 3/4 cup pitted dates, soaked in water to soften (can be soaked for up to 3 days in the refrigerator)
  2. 1 1/2 tsp freshly grated ginger
  3. 2 cups oat flour
  4. 2 cups rolled oats
  5. 1/4 cup chopped almonds
  6. 1/2 cup oil (walnut, safflower or sunflower all work great)
  7. 1/2cup maple syrup
  8. 1/2 teaspoon vanilla extract
  9. 1/2 teaspoon sea salt
  10. 1 1/2 tsp finely chopped crystallized ginger
  1. Preheat oven to 350° F.
  2. Place dates and ginger in a food processor, chop until smooth.
  3. In a bowl, combine oat flour, oats and almonds.
  4. In another bowl, combine oil, maple syrup, vanilla extract and sea salt .
  5. Mix wet and dry ingredients together until just combined.
  6. Line 8X8 baking dish with parchment paper and spray lightly with cooking spray.
  7. Press half of the flour mixture into the bottom of baking pan.
  8. Spread pureed date mixture over the top, then press the rest of the flour mixture onto the dates.
  9. Sprinkle crystallized ginger over the top.
  10. Bake for 30 minutes or until lightly browned. Let cool completely, then lift out of pan with parchment paper. Cut into squares.
  1. When spreading dough into baking pan, use a large spoon dipped into warm water and spread with the back of the spoon to help prevent sticking.
  2. Store bars in airtight container.
