Sweet Potato Hash

Sweet Potato Hash: Gluten Free - Pure and Simple Sweet Potato Hash is uniquely delicious, featuring sweet potatoes, chicken sausage, sweet onions and spinach. Seasoned with garlic and a touch of chipotle, bringing great flavors together for a big, bowl of taste.

  1. 2 tablespoons high-heat oil, divided
  2. 3 links Gluten Free chicken sausage(removed from casings) or sausage of choice
  3. 1/2 sweet onion, thinly sliced
  4. 4 cloves garlic, minced
  5. 1 finely minced chipotle pepper (optional)
  6. 1/2 teaspoon fennel seeds
  7. 2 medium garnet or jewel yams, peeled and cut into 1/2-inch cubes
  8. 1 bunch spinach, washed and lightly chopped
  9. Salt and black pepper, to taste
  10. 4 eggs
  1. Heat 1 tablespoon oil in a cast-iron skillet over medium-high heat.
  2. Add sausage; crumble and cook until no longer pink.
  3. Add onion, garlic, chipotle and fennel seeds; cook until onion is soft, 5 to 7 minutes.
  4. Remove mixture from pan. Set Aside.
  5. Heat remaining oil in skillet and add yams.
  6. Cook until golden and tender, stirring occasionally, about 20 minutes.
  7. Return sausage mixture to the skillet.
  8. Stir in spinach and cook until wilted, about a minute.
  9. Season with salt and pepper.
  10. Using a spoon, make 4 shallow indentations in the hash and crack 1 egg into each indentation.
  11. Season eggs with salt and pepper.
  12. Reduce heat to medium low, cover, and cook until whites are set, 8 to 10 minutes.
  13. Serve immediately
  1. Chipotles add a spicy smokiness to the hash which enhances the depth of flavor. That said, if spiciness is not your thing reduce the amount by half, to retain a bit of the smokiness that adds so much to the dish.
