Garlic Aioli

Garlic Aioli
  • 1 egg yolk
  • 1 clove garlic, crushed
  • 1 tsp sea salt
  • 2 tsp white wine
  • ½ cup olive oil
  • Freshly ground black pepper
  1. Mix crushed garlic with sea salt to form a paste.
  2. Place garlic paste, egg yolk, and white wine into food processor and pulse until blended.
  3. Turn processor on high and slowly dribble olive oil through food chute and continue processing until egg mixture has thickened.
  4. Season to taste with salt and pepper. Serve immediately or cover and chill for up to two days.
